The cacao used in this bar is grown on a single farm near the west coast of Karnataka among an array of palms, fruits and spices in what the farm’s Director, Dr. Varanashi has described as a “managed jungle” more than a farm. The cacao is heap fermented under banana leaves, sun-dried and processed at low temperatures to preserve their inherent nutritional wealth.
The unique soil, topographical and weather conditions in South India give our beans and chocolate their unique fruity and zesty flavour.
Our single estate Karnatakan cacao has a robust flavour profile with prominent acidity, fruitiness, hints of raisin, subtle umami and tobacco.
